RECIPE: Best Gluten-Free Banana Bread

Does anyone have any recipes for bananas?
Someone gave me a bunch of bananas that, well, are best to be used in a recipe. The only recipes I know are banana bread and pudding, but don’t have the recipes. Does anyone have the recipe for these, or better yet, something else that could be made with them? Thank you!
Three ideas:
FROZEN BANANAS! Cut bananas in half and insert a popsicle stick in the cut end. Dip in melted chocolate (just melt choc chips in the microwave) and put on some sprinkles or chopped nuts. Freeze on a wax paper-lined cookie sheet. Yum!
SMOOTHIES! I like to peel ripe bananas and pop them in freezer bags. Add to a blender with juice and yogurt and you have a great, thick smoothie.
BANANA NUT BREAD (This is soooo good.)
1/2 cup shortening/butter
1 cup brown sugar
2 eggs
1 cup bananas, crushed
1/2 teaspoon salt
1/2 cup nuts
2 cups unbleached flour
1 teaspoon baking soda
Cream shortening. Add sugar gradually and cream well. Add eggs one at a time. Blend in bananas, nuts and sifted dry ingredients.
Pour into greased loaf pan. Bake 1 hour at 350 degrees.
Yield: 1 loaf

Does anyone have a yummy, easy recipe for banana bread?
Here is a delcious recipe my mom makes sometimes before school for my sisters, it’s that fast. It is also vegan, so it doesn’t have dairy, (make you stuffy in the nose department) or egg. The recipe is for muffins so it bakes faster than bread (and also is easier for packing in lunches, eatin gon the go, and little hands) but you can just pour the batter into a greased bread pan and bake, too.
Also, I have found that you can really use as many bananas as you have (no more that seven or so) if you don’t have enough. Just add a little more tofu or applesauce.
2/3 cup brown sugar
2/3 cup white sugar
2/3 cup safflower or light olive oil
blended silken tofu, enough to equal 4 eggs, about 1 cup, or 3/4 cup of smooth apple sauce
4 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
6 banana
3 1/2 cups flour
To make it quicker, you can stir together the dry ingredients earlier, and blend together the bananas, oil, tofu/applesauce, and sugars and store the 2 mixtures seperatly until your ready to bake.
1. preheat oven to 350.
2. Blend together the bananas, sugars, oil, and tofu/applesauce in a blender.
3. stir together the flour, salt, powder, and soda.
4. gently mix wet and dry mixtures just until almost smooth (there should still be some lumps.)
Bake in greased muffin tins (makes about 48 muffins) for 15-18 minutes, or in a greased breat pan for 45-50 minutes.
